- 1 pound large shrimp, peeled and deveined
- 1 cup shredded coconut
- 1/2 cup panko breadcrumbs
- 1/2 cup all-purpose flour
- 2 large eggs
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste

Instructions
- Rinse the shrimp under cold water and pat them dry with paper towels.
- In one bowl, place the all-purpose flour and season with salt, pepper, garlic powder, and paprika. In a second bowl, beat the eggs until well combined. In a third bowl, mix together the shredded coconut and panko breadcrumbs.
- Dredge each shrimp in the flour mixture, shaking off any excess. Dip the floured shrimp into the beaten eggs, allowing any excess to drip off. Finally, coat the shrimp in the coconut and panko mixture, pressing gently to adhere.
- Preheat the air fryer to 400°F (200°C). Lightly spray the air fryer basket with cooking spray. Arrange the breaded shrimp in a single layer, ensuring they are not overcrowded. Spray the tops of the shrimp lightly with cooking spray for extra crispiness. Cook for 8-10 minutes, flipping halfway through, until the shrimp are golden brown and cooked through.
- Remove the shrimp from the air fryer and serve immediately with your favorite dipping sauce.
