Berry Crumble Bars are a delightful and easy summer dessert made with a crumbly crust and a sweet berry filling.

- 1 ½ cups all-purpose flour
- ½ cup rolled oats
- ½ cup brown sugar, packed
- ½ teaspoon baking powder
- ¼ teaspoon salt
- ½ cup unsalted butter, melted
- 2 cups mixed berries (strawberries, blueberries, raspberries, blackberries)
- ¼ cup granulated sugar
- 1 tablespoon cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking dish or line it with parchment paper.
- In a large mixing bowl, combine the flour, rolled oats, brown sugar, baking powder, and salt. Stir until well mixed.
- Pour the melted butter into the dry mixture and stir until crumbly. Reserve about 1 cup for the topping.
- In another bowl, combine the mixed berries, granulated sugar, cornstarch, lemon juice, and vanilla extract. Gently toss to coat the berries.
- Press the remaining crumb mixture firmly into the bottom of the prepared baking dish.
- Spread the berry mixture evenly over the crust.
- Sprinkle the reserved crumb mixture over the berry filling.
- Bake for 30-35 minutes, or until the topping is golden brown and the filling is bubbly.
- Allow the bars to cool in the baking dish for at least 10 minutes before slicing into squares.
- Enjoy your berry crumble bars warm or at room temperature.
