Description

Berry Crumble Bars are a delightful and easy summer dessert made with a crumbly crust and a sweet berry filling.


Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • ½ cup rolled oats
  • ½ cup brown sugar, packed
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup unsalted butter, melted
  • 2 cups mixed berries (strawberries, blueberries, raspberries, blackberries)
  • ¼ cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking dish or line it with parchment paper.
  2. In a large mixing bowl, combine the flour, rolled oats, brown sugar, baking powder, and salt. Stir until well mixed.
  3. Pour the melted butter into the dry mixture and stir until crumbly. Reserve about 1 cup for the topping.
  4. In another bowl, combine the mixed berries, granulated sugar, cornstarch, lemon juice, and vanilla extract. Gently toss to coat the berries.
  5. Press the remaining crumb mixture firmly into the bottom of the prepared baking dish.
  6. Spread the berry mixture evenly over the crust.
  7. Sprinkle the reserved crumb mixture over the berry filling.
  8. Bake for 30-35 minutes, or until the topping is golden brown and the filling is bubbly.
  9. Allow the bars to cool in the baking dish for at least 10 minutes before slicing into squares.
  10. Enjoy your berry crumble bars warm or at room temperature.
