Description

Enjoy a comforting bowl of creamy broccoli cheddar soup made in a slow cooker.


Ingredients

  • 4 cups fresh broccoli florets, chopped
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup heavy cream
  • 2 cups shredded sharp cheddar cheese
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (optional, for thickening)

Instructions

  1. Combine broccoli, onion, garlic, carrots, celery, vegetable broth, thyme, salt, and pepper in a slow cooker.
  2. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until vegetables are tender.
  3. Puree soup with an immersion blender until smooth. Stir in heavy cream and cheddar cheese until melted. For a thicker soup, mix cornstarch with water and stir into the soup, cook for 10-15 minutes.
  4. Ladle into bowls and serve hot.

Notes

  • For a chunkier texture, blend only half of the soup.
