- 4 cups fresh broccoli florets, chopped
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup heavy cream
- 2 cups shredded sharp cheddar cheese
- 1 tablespoon cornstarch mixed with 2 tablespoons water (optional, for thickening)
Instructions
- Combine broccoli, onion, garlic, carrots, celery, vegetable broth, thyme, salt, and pepper in a slow cooker.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until vegetables are tender.
- Puree soup with an immersion blender until smooth. Stir in heavy cream and cheddar cheese until melted. For a thicker soup, mix cornstarch with water and stir into the soup, cook for 10-15 minutes.
- Ladle into bowls and serve hot.
Notes
- For a chunkier texture, blend only half of the soup.
