Ingredients

  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup unsalted butter, softened
  • 3 ½ cups powdered sugar
  • ½ cup unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • ¼ cup milk (adjust for desired consistency)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Whisk together until well blended.
  3. Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Beat on medium speed for 2 minutes until smooth.
  4. Stir in the boiling water until the batter is well combined. The batter will be thin.
  5. Divide the batter evenly between the prepared cake pans.
  6. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  7. Remove from the oven and let the cakes cool in the pans for 10 minutes. Then, transfer to wire racks to cool completely.
  8. In a large bowl, beat the softened butter until creamy.
  9. Gradually add the powdered sugar and cocoa powder, mixing on low speed until combined.
  10. Stir in the vanilla extract and milk. Beat on high speed for 3 minutes until the frosting is light and fluffy. Adjust the consistency with more milk if necessary.
  11. Once the cakes are completely cooled, place one layer on a serving plate. Spread a layer of frosting on top.
  12. Place the second cake layer on top and frost the top and sides of the cake.
  13. Use additional frosting to create decorative designs, such as swirls, rosettes, or even chocolate shavings for an elegant touch.
