Description

Chocolate Cake with Strawberry Jam is a delightful dessert for any occasion.


Ingredients

  • 1 ¾ cups all-purpose flour
  • 1 ¾ cups granulated sugar
  • ¾ cup unsweetened cocoa powder
  • 1 ½ teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup strawberry jam (store-bought or homemade)
  • Fresh strawberries, sliced (for garnish)
  • 1 cup unsalted butter, softened
  • 3 ½ cups powdered sugar
  • ½ cup unsweetened cocoa powder
  • ½ teaspoon vanilla extract
  • ¼ cup heavy cream (more if needed)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Whisk until well combined.
  3. Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Beat on medium speed for about 2 minutes until well blended.
  4. Carefully stir in the boiling water until the batter is smooth (the batter will be thin).
  5. Pour the batter evenly into the prepared cake pans. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean. Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
  6. In a large bowl, beat the softened butter on medium speed until creamy.
  7. Gradually add the powdered sugar and cocoa powder, mixing on low speed until combined.
  8. Add the vanilla extract and heavy cream. Beat on high speed for about 3 minutes until the frosting is light and fluffy. If the frosting is too thick, add more cream, one tablespoon at a time.
  9. Place one cake layer on a serving plate. Spread a layer of strawberry jam over the top.
  10. Place the second cake layer on top of the jam layer.
  11. Use the chocolate frosting to cover the top and sides of the cake. Smooth it out with a spatula for a neat finish.
  12. Decorate the top with fresh sliced strawberries.
