- 1 ¾ cups all-purpose flour
- 1 ¾ cups granulated sugar
- ¾ cup unsweetened cocoa powder
- 1 ½ teaspoons baking powder
- 1 ½ teaspoons baking soda
- 1 teaspoon salt
- 2 large eggs
- 1 cup whole milk
- ½ cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 1 cup heavy cream
- 8 ounces semi-sweet chocolate, chopped
- 1 tablespoon unsalted butter
- Chocolate shavings or sprinkles (optional)
- Fresh berries (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large mixing bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt. Whisk until well combined.
- Add eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Beat on medium speed for about 2 minutes until smooth. Carefully stir in the boiling water until the batter is well combined.
- Divide the batter evenly between the prepared cake pans. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean. Let the cakes cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
- In a small saucepan, heat the heavy cream over medium heat until it begins to simmer. Remove from heat.
- Place the chopped chocolate in a heatproof bowl. Pour the hot cream over the chocolate and let it sit for 5 minutes. Add the butter and stir until smooth and glossy.
- Once the cakes are completely cool, level the tops with a knife if necessary.
- Place one cake layer on a serving plate. Spread a layer of ganache on top, then place the second cake layer on top of the first.
- Pour the remaining ganache over the top of the cake, allowing it to drip down the sides. Use a spatula to spread it evenly if needed.
- Optionally, decorate the top of the cake with chocolate shavings, sprinkles, or fresh berries.
- Slice the cake and serve it to your guests.
