  • 1/2 cup mixed dried fruits (raisins, currants, and chopped dried apricots)
  • 1/2 cup chopped nuts (walnuts or pecans)
  • Powdered sugar (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the all-purpose flour, baking powder, salt, cinnamon, and nutmeg.
  5. Gradually add the dry ingredients to the butter mixture, alternating with the milk. Mix until just combined.
  6. Gently fold in the mixed dried fruits and chopped nuts until evenly distributed throughout the batter.
  7. Divide the batter evenly between the prepared cake pans.
  8. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
  10. Once cooled, dust the tops with powdered sugar before serving.
