Description

Coconut Curry Steak and Shrimp Stir Fry is a flavorful and vibrant dish that combines tender steak and shrimp with a rich coconut curry sauce.


Ingredients

  • 1 pound flank steak, thinly sliced
  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons vegetable oil
  • 1 onion, sliced
  • 2 bell peppers, sliced (red and green)
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 can (13.5 oz) coconut milk
  • 2 tablespoons red curry paste
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)

Instructions

  1. Season the sliced flank steak with salt and pepper. In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the steak and stir-fry for about 3-4 minutes until browned. Remove the steak from the skillet and set aside.
  2. In the same skillet, add the shrimp and cook for about 2-3 minutes until they turn pink and opaque. Remove the shrimp and set aside with the steak.
  3. In the same skillet, add the remaining tablespoon of vegetable oil. Add the sliced onion and bell peppers, stirring frequently for about 5 minutes until they are tender-crisp.
  4. Add the minced garlic and ginger, cooking for an additional minute until fragrant.
  5. Pour in the coconut milk and stir in the red curry paste, soy sauce, fish sauce, and brown sugar. Bring the mixture to a gentle simmer, stirring until the curry paste is fully dissolved.
  6. Return the cooked steak and shrimp to the skillet, stirring to coat them in the curry sauce. Cook for an additional 2-3 minutes until everything is heated through and well combined.
  7. Taste and adjust seasoning with salt and pepper if needed.
  8. Serve the coconut curry steak and shrimp stir fry hot, garnished with fresh cilantro and lime wedges on the side.

Notes

  • Adjust the spice level by adding more or less red curry paste.
  • Serve with rice or noodles for a complete meal.
