Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking dish.
  2. Cream together the softened butter and granulated sugar until light and fluffy. Add the eggs, one at a time, mixing well after each addition. Stir in the sour cream and vanilla extract.
  3. In another bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  4. For Cinnamon Swirl: In a small bowl, mix the brown sugar and cinnamon. Pour half of the batter into the prepared baking dish, sprinkle with the cinnamon mixture and chopped nuts if using, then top with the remaining batter.
  5. For Chocolate Chip: Fold in the chocolate chips into the batter before pouring it into the baking dish.
  6. For Lemon Poppy Seed: Add lemon zest and poppy seeds to the batter before pouring it into the baking dish.
  7. For Almond: Stir in almond extract and pour the batter into the baking dish, topping with sliced almonds.
  8. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the coffee cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
