Description

Cream of Shrimp Soup is a rich and flavorful delight that offers a comforting experience.


Ingredients

  • 1 pound shrimp, peeled and deveined
  • 4 tablespoons unsalted butter
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1/4 cup all-purpose flour
  • 4 cups seafood or chicken broth
  • 1 cup heavy cream
  • 1 teaspoon Old Bay seasoning
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, melt 2 tablespoons of butter over medium heat. Add the shrimp and cook for about 2-3 minutes until they turn pink and opaque. Remove the shrimp from the pot and set aside.
  2. In the same pot, add the remaining 2 tablespoons of butter. Once melted, add the chopped onion and cook until translucent, about 4-5 minutes. Add the minced garlic and cook for an additional minute.
  3. Sprinkle the flour over the sautéed onions and garlic, stirring well to combine. Cook for about 2 minutes to eliminate the raw flour taste.
  4. Gradually whisk in the seafood or chicken broth, ensuring there are no lumps. Bring the mixture to a simmer and cook for about 10 minutes, allowing it to thicken slightly. Lower the heat and stir in the heavy cream. Add the Old Bay seasoning, salt, and pepper to taste. Let the soup simmer for another 5 minutes.
  5. Return the cooked shrimp to the pot and heat through for a couple of minutes. Ladle the soup into bowls and garnish with chopped fresh parsley before serving.
