Creamy Caramel Pudding is a delightful treat for any occasion.
Ingredients

- 1 cup granulated sugar
- 1/4 cup water
- 2 cups whole milk
- 1/2 cup heavy cream
- 3 large eggs
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- In a medium saucepan, combine the granulated sugar and water. Stir gently to combine.
- Place the saucepan over medium heat and bring to a boil without stirring. Allow the mixture to boil until it turns a deep amber color, about 8-10 minutes. Watch closely to prevent burning.
- Once the desired color is reached, carefully pour the caramel into the bottom of a 9-inch round cake pan, tilting the pan to coat the bottom evenly. Set aside to cool and harden.
- In a saucepan, combine the whole milk and heavy cream. Heat over medium heat until just simmering, then remove from heat.
- In a mixing bowl, whisk together the eggs, vanilla extract, and salt until well combined.
- Gradually pour the warm milk mixture into the egg mixture, whisking constantly to temper the eggs.
- Carefully pour the pudding mixture over the hardened caramel in the cake pan.
- Place the cake pan in a larger baking dish and fill the outer dish with hot water until it reaches halfway up the sides of the cake pan.
- Preheat the oven to 350°F (175°C) and bake for 45-50 minutes, or until the pudding is set and a knife inserted in the center comes out clean.
- Remove the cake pan from the water bath and let it cool to room temperature. Then refrigerate for at least 4 hours or overnight.
- To serve, run a knife around the edges of the pudding, then invert onto a serving plate. The caramel will flow over the top.
