Description

Creamy Caramel Pudding is a delightful treat for any occasion.


Ingredients

Scale
  • 1 cup granulated sugar
  • 1/4 cup water
  • 2 cups whole milk
  • 1/2 cup heavy cream
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. In a medium saucepan, combine the granulated sugar and water. Stir gently to combine.
  2. Place the saucepan over medium heat and bring to a boil without stirring. Allow the mixture to boil until it turns a deep amber color, about 8-10 minutes. Watch closely to prevent burning.
  3. Once the desired color is reached, carefully pour the caramel into the bottom of a 9-inch round cake pan, tilting the pan to coat the bottom evenly. Set aside to cool and harden.
  4. In a saucepan, combine the whole milk and heavy cream. Heat over medium heat until just simmering, then remove from heat.
  5. In a mixing bowl, whisk together the eggs, vanilla extract, and salt until well combined.
  6. Gradually pour the warm milk mixture into the egg mixture, whisking constantly to temper the eggs.
  7. Carefully pour the pudding mixture over the hardened caramel in the cake pan.
  8. Place the cake pan in a larger baking dish and fill the outer dish with hot water until it reaches halfway up the sides of the cake pan.
  9. Preheat the oven to 350°F (175°C) and bake for 45-50 minutes, or until the pudding is set and a knife inserted in the center comes out clean.
  10. Remove the cake pan from the water bath and let it cool to room temperature. Then refrigerate for at least 4 hours or overnight.
  11. To serve, run a knife around the edges of the pudding, then invert onto a serving plate. The caramel will flow over the top.
