- 8 oz fettuccine or pasta of your choice
- 2 boneless, skinless chicken breasts, sliced into thin strips
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 tablespoon unsalted butter
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 8 oz cremini or button mushrooms, sliced
- 1 cup Marsala wine
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Fresh parsley, chopped (for garnish)
Instructions
- Boil Water: In a large pot, bring salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Drain and set aside, reserving a little pasta water.
- Season Chicken: Season the sliced chicken breasts with salt and pepper.
- Sauté Chicken: In a large skillet, heat olive oil over medium-high heat. Add the chicken strips and cook for about 5-7 minutes until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- Sauté Aromatics: In the same skillet, add the butter. Once melted, add the chopped onion and cook until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional minute.
- Add Mushrooms: Add the sliced mushrooms to the skillet and sauté until they are browned and tender, about 5 minutes.
- Deglaze with Wine: Pour in the Marsala wine, scraping the bottom of the skillet to release any browned bits. Let it simmer for about 3-4 minutes until slightly reduced.
- Add Cream: Stir in the heavy cream and bring to a gentle simmer. Cook for another 3-4 minutes until the sauce thickens slightly.
- Combine: Return the cooked chicken to the skillet and add the cooked pasta. Toss everything together, adding reserved pasta water if needed to reach desired consistency. Stir in the grated Parmesan cheese and adjust seasoning with salt and pepper to taste.
- Garnish and Serve: Serve the creamy chicken Marsala pasta hot, garnished with chopped fresh parsley.
