Ingredients

  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon turmeric powder
  • 1 pound chicken breast, cut into bite-sized pieces
  • 1 can (14 oz) coconut milk
  • 1 cup chicken broth
  • 1 red bell pepper, sliced
  • 1 cup green peas (fresh or frozen)
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)
  • Cooked rice or naan, for serving

Instructions

  1. Heat coconut oil in a large pot or Dutch oven over medium heat. Add the chopped onion and sauté for about 5 minutes until it becomes translucent. Stir in the minced garlic and grated ginger, cooking for an additional minute until fragrant.
  2. Sprinkle in the curry powder, ground cumin, and turmeric powder, stirring well to combine. Add the chicken pieces to the pot, cooking for about 5-7 minutes until the chicken is browned on all sides.
  3. Pour in the coconut milk and chicken broth, stirring to combine. Bring the mixture to a gentle simmer, then reduce the heat to low. Cover the pot and let it cook for about 15 minutes, allowing the flavors to meld.
  4. After 15 minutes, add the sliced red bell pepper and green peas to the pot. Stir well and continue to simmer for another 5-7 minutes until the vegetables are tender and the chicken is cooked through. Season with salt and pepper to taste.
  5. Remove from heat and garnish with freshly chopped cilantro. Serve the creamy coconut chicken curry hot over cooked rice or with naan.
