- 1 pound chicken breast, cut into bite-sized pieces
- 1 can (14 oz) coconut milk
- 1 cup chicken broth
- 1 red bell pepper, sliced
- 1 cup green peas (fresh or frozen)
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish)
- Cooked rice or naan, for serving
Instructions
- Heat coconut oil in a large pot or Dutch oven over medium heat. Add the chopped onion and sauté for about 5 minutes until it becomes translucent. Stir in the minced garlic and grated ginger, cooking for an additional minute until fragrant.
- Sprinkle in the curry powder, ground cumin, and turmeric powder, stirring well to combine. Add the chicken pieces to the pot, cooking for about 5-7 minutes until the chicken is browned on all sides.
- Pour in the coconut milk and chicken broth, stirring to combine. Bring the mixture to a gentle simmer, then reduce the heat to low. Cover the pot and let it cook for about 15 minutes, allowing the flavors to meld.
- After 15 minutes, add the sliced red bell pepper and green peas to the pot. Stir well and continue to simmer for another 5-7 minutes until the vegetables are tender and the chicken is cooked through. Season with salt and pepper to taste.
- Remove from heat and garnish with freshly chopped cilantro. Serve the creamy coconut chicken curry hot over cooked rice or with naan.
