Description

Creamy Garlic Tuscan Salmon is an easy and elegant dinner recipe that combines seared salmon with a rich and flavorful creamy sauce.


Ingredients

  • 4 salmon fillets (about 6 oz each)
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1 tablespoon fresh lemon juice
  • Fresh basil, chopped (for garnish)

Instructions

  1. Season Salmon: Pat the salmon fillets dry with paper towels and season both sides with salt and pepper.
  2. Sear Salmon: In a large skillet, heat olive oil over medium-high heat. Add the salmon fillets, skin-side down, and cook for about 4-5 minutes until the skin is crispy. Carefully flip the fillets and cook for another 3-4 minutes until cooked through. Remove the salmon from the skillet and set aside.
  3. Sauté Garlic: In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
  4. Add Tomatoes and Spinach: Stir in the cherry tomatoes and cook for 2-3 minutes until they start to soften. Add the fresh spinach and cook until wilted.
  5. Create Cream Sauce: Pour in the heavy cream, then add the grated Parmesan cheese and Italian seasoning. Stir well to combine and let it simmer for 2-3 minutes until the sauce thickens slightly. Add lemon juice and mix well.
  6. Return Salmon: Gently place the seared salmon fillets back into the skillet, spooning the creamy sauce over them. Let them simmer together for an additional 2 minutes to heat through.
  7. Garnish and Serve: Serve the salmon hot, garnished with chopped fresh basil.
