- 4 salmon fillets (about 6 oz each)
- Salt and pepper to taste
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1 cup fresh spinach
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 1 tablespoon fresh lemon juice
- Fresh basil, chopped (for garnish)
Instructions
- Season Salmon: Pat the salmon fillets dry with paper towels and season both sides with salt and pepper.
- Sear Salmon: In a large skillet, heat olive oil over medium-high heat. Add the salmon fillets, skin-side down, and cook for about 4-5 minutes until the skin is crispy. Carefully flip the fillets and cook for another 3-4 minutes until cooked through. Remove the salmon from the skillet and set aside.
- Sauté Garlic: In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
- Add Tomatoes and Spinach: Stir in the cherry tomatoes and cook for 2-3 minutes until they start to soften. Add the fresh spinach and cook until wilted.
- Create Cream Sauce: Pour in the heavy cream, then add the grated Parmesan cheese and Italian seasoning. Stir well to combine and let it simmer for 2-3 minutes until the sauce thickens slightly. Add lemon juice and mix well.
- Return Salmon: Gently place the seared salmon fillets back into the skillet, spooning the creamy sauce over them. Let them simmer together for an additional 2 minutes to heat through.
- Garnish and Serve: Serve the salmon hot, garnished with chopped fresh basil.
