Description

Creamy Lemon Chicken Piccata is a zesty and delicious weeknight meal that is quick to prepare.


Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1/2 cup all-purpose flour
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 3 garlic cloves, minced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup fresh lemon juice
  • 1 tablespoon capers, rinsed and drained
  • Zest of 1 lemon
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the chicken breasts with salt and pepper on both sides. Dredge each piece in flour, shaking off any excess.
  2. In a large skillet, heat the olive oil and 1 tablespoon of butter over medium-high heat. Add the chicken breasts and cook for about 5-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the remaining tablespoon of butter and minced garlic. Sauté for about 1 minute until fragrant.
  4. Pour in the chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the pan.
  5. Stir in the heavy cream, lemon juice, capers, and lemon zest. Allow the sauce to simmer for 3-4 minutes until slightly thickened.
  6. Return the chicken to the skillet, coating it in the creamy lemon sauce. Cook for an additional 2-3 minutes to heat through.
  7. Garnish with chopped fresh parsley before serving.
