Creamy Lemon Chicken Piccata is a zesty and delicious weeknight meal that is quick to prepare.

- 4 boneless, skinless chicken breasts
- Salt and pepper to taste
- 1/2 cup all-purpose flour
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 3 garlic cloves, minced
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1/4 cup fresh lemon juice
- 1 tablespoon capers, rinsed and drained
- Zest of 1 lemon
- Fresh parsley, chopped (for garnish)
Instructions
- Season the chicken breasts with salt and pepper on both sides. Dredge each piece in flour, shaking off any excess.
- In a large skillet, heat the olive oil and 1 tablespoon of butter over medium-high heat. Add the chicken breasts and cook for about 5-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of butter and minced garlic. Sauté for about 1 minute until fragrant.
- Pour in the chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the pan.
- Stir in the heavy cream, lemon juice, capers, and lemon zest. Allow the sauce to simmer for 3-4 minutes until slightly thickened.
- Return the chicken to the skillet, coating it in the creamy lemon sauce. Cook for an additional 2-3 minutes to heat through.
- Garnish with chopped fresh parsley before serving.

- Serve with pasta or rice for a complete meal.
- Adjust lemon juice to taste for more or less tanginess.
