- 8 oz fettuccine pasta
- 1 lb shrimp, peeled and deveined
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- Salt and pepper to taste
- 1/4 teaspoon red pepper flakes (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot, bring salted water to a boil. Add the fettuccine pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.
- In a large skillet, heat olive oil over medium heat. Add the shrimp and season with salt, pepper, and red pepper flakes if using. Cook for 2-3 minutes on each side until the shrimp are pink and opaque. Remove the shrimp from the skillet and set aside.
- In the same skillet, add minced garlic and sauté for about 1 minute until fragrant. Pour in the heavy cream and bring to a gentle simmer. Cook for 2-3 minutes, stirring frequently. Gradually whisk in the Parmesan cheese until melted and the sauce is smooth. If the sauce is too thick, add some reserved pasta water to reach the desired consistency. Season with salt and pepper to taste.
- Add the cooked fettuccine and shrimp to the Alfredo sauce, tossing gently to coat everything evenly. Serve hot, garnished with chopped fresh parsley.
