- 4 boneless, skinless chicken breasts
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 3 garlic cloves, minced
- 1 cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- 1 teaspoon Italian seasoning
- 1/2 cup grated Parmesan cheese
- Fresh basil leaves, for garnish
Instructions
- Season the chicken breasts with salt and pepper on both sides. In a large skillet, heat olive oil over medium-high heat. Add the chicken breasts and cook for about 6-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, add the chopped onion and cook for about 3-4 minutes until translucent. Add the minced garlic and cook for an additional minute until fragrant. Stir in the chopped sun-dried tomatoes and cook for another 2 minutes. Pour in the heavy cream and add the Italian seasoning. Stir well to combine and bring the mixture to a gentle simmer.
- Add the grated Parmesan cheese to the sauce and stir until melted and smooth. Place the cooked chicken breasts back into the skillet, spooning the sauce over them. Let it simmer for an additional 2-3 minutes to heat through. Serve the creamy sundried tomato chicken hot, garnished with fresh basil leaves.
