Description

Crispy Smashed Potatoes with Garlic & Herbs is a delightful side dish for any meal.


Ingredients

  • 2 pounds baby potatoes
  • 4 tablespoons olive oil
  • 4 garlic cloves, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare Potatoes: Place the baby potatoes in a large pot and cover them with cold water. Add a generous pinch of salt.
  2. Boil: Bring the water to a boil over high heat. Reduce the heat to medium and cook the potatoes for about 15-20 minutes, or until they are fork-tender. Drain and let them cool slightly.
  3. Preheat Oven: Preheat your oven to 450°F (230°C).
  4. Smash Potatoes: On a baking sheet lined with parchment paper, arrange the boiled potatoes. Using a potato masher or the bottom of a glass, gently smash each potato until flattened but still intact.
  5. Season: Drizzle the olive oil over the smashed potatoes. Sprinkle the minced garlic, dried thyme, dried rosemary, salt, and pepper evenly over the top.
  6. Roast Potatoes: Place the baking sheet in the preheated oven and roast the potatoes for 20-25 minutes, or until they are golden brown and crispy.
  7. Garnish and Serve: Remove from the oven and sprinkle with fresh parsley before serving.
