- 2 pounds baby potatoes
- 4 tablespoons olive oil
- 4 garlic cloves, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste

Instructions
- Prepare Potatoes: Place the baby potatoes in a large pot and cover them with cold water. Add a generous pinch of salt.
- Boil: Bring the water to a boil over high heat. Reduce the heat to medium and cook the potatoes for about 15-20 minutes, or until they are fork-tender. Drain and let them cool slightly.
- Preheat Oven: Preheat your oven to 450°F (230°C).
- Smash Potatoes: On a baking sheet lined with parchment paper, arrange the boiled potatoes. Using a potato masher or the bottom of a glass, gently smash each potato until flattened but still intact.
- Season: Drizzle the olive oil over the smashed potatoes. Sprinkle the minced garlic, dried thyme, dried rosemary, salt, and pepper evenly over the top.
- Roast Potatoes: Place the baking sheet in the preheated oven and roast the potatoes for 20-25 minutes, or until they are golden brown and crispy.
- Garnish and Serve: Remove from the oven and sprinkle with fresh parsley before serving.
