Description

Danish Layer Cake is a delightful treat for any occasion, featuring layers of cake, raspberry jam, and pastry cream, all topped with whipped cream and fresh berries.


Ingredients

  • 2 cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 ½ cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 1 cup raspberry jam
  • 1 cup pastry cream (store-bought or homemade)
  • 2 cups heavy whipping cream
  • ¼ cup powdered sugar
  • 1 teaspoon vanilla extract
  • Fresh berries (strawberries, raspberries, or blueberries)
  • Mint leaves (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
  2. In a bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk. Begin and end with the dry ingredients. Mix until just combined.
  6. Divide the batter evenly among the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes before transferring them to wire racks to cool completely.
  7. Once the cake layers are completely cool, place one layer on a serving plate. Spread a layer of raspberry jam over the top, followed by a layer of pastry cream. Repeat this process with the second layer. Place the third cake layer on top, ensuring it is centered.
  8. In a mixing bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form. Use the whipped cream to frost the top and sides of the assembled cake, smoothing it out as desired.
  9. Top the cake with fresh berries and mint leaves for garnish. Cut into slices and serve chilled.
