    • 2 large eggs
    • 1 cup whole milk
    • ½ cup vegetable oil
    • 2 teaspoons pure vanilla extract
    • 1 cup boiling water
  • For Lemon Cake:
    • 2 cups all-purpose flour
    • 1 ½ cups granulated sugar
    • ½ teaspoon salt
    • 1 tablespoon baking powder
    • ½ cup unsalted butter, softened
    • 3 large eggs
    • 1 tablespoon lemon zest
    • 1 tablespoon lemon juice
    • 1 cup whole milk

Instructions

  1. Prepare the Cake Batter
    • For Vanilla Cake: Preheat the oven to 350°F (175°C). In a bowl, whisk together flour, baking powder, and salt. In another bowl, cream the butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract. Gradually add the flour mixture and milk, alternating between them, starting and ending with the flour mixture. Mix until just combined.
    • For Chocolate Cake: Preheat the oven to 350°F (175°C). In a large bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt. In another bowl, whisk together eggs, milk, oil, and vanilla. Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Carefully stir in boiling water until the batter is smooth.
    • For Lemon Cake: Preheat the oven to 350°F (175°C). In a bowl, whisk together flour, sugar, salt, and baking powder. In another bowl, cream the butter until smooth, then add eggs, lemon zest, and lemon juice. Mix well. Gradually add the dry ingredients and milk, mixing until just combined.
  2. Bake the Cakes
    • For Vanilla Cake: Divide the batter evenly between two greased and floured 9-inch round cake pans. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Let cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
    • For Chocolate Cake: Pour the batter evenly into two greased and floured 9-inch round cake pans. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. Allow to cool in the pans for 10 minutes before transferring to wire racks to cool completely.
    • For Lemon Cake: Divide the batter between two greased and floured 9-inch round cake pans. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Let cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  3. Assemble and Serve
