- 4 pieces boneless, skinless chicken breasts
- 1 cup crushed cornflakes
- 1 cup shredded cheddar cheese
- 1/2 cup all-purpose flour
- 2 large eggs
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- Salt, to taste
- Pepper, to taste
- Cooking spray or olive oil, as needed
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Pat chicken breasts dry. Season with salt, pepper, garlic powder, onion powder, and paprika.
- Set up three bowls: flour in one, beaten eggs in the second, and cornflake-cheddar mix in the third.
- Dredge chicken in flour, then egg, then press into the cornflake mixture to coat thoroughly.
- Place on baking sheet. Lightly spray or drizzle with oil.
- Bake 25–30 minutes, or until golden and internal temp reaches 165°F (75°C).
- Let rest a few minutes before serving.
