- 2 ¾ pounds San Marzano plum tomatoes
- 1 ½ onions, finely chopped
- 3 cloves garlic, minced
- 1 ½ teaspoons dried oregano
- ½ teaspoon red pepper flakes
- 3 tablespoons olive oil
- 16 ounces spaghetti
- Fresh basil leaves, optional for garnish
- Vegetarian or vegan Parmesan cheese, optional for garnish
Instructions
- In a medium saucepan or Dutch oven, combine the San Marzano tomatoes, chopped onions, and minced garlic. Add the dried oregano, red pepper flakes, and olive oil. Stir well to combine all the ingredients. Bring the mixture to a simmer over medium heat, then reduce the heat and let it simmer for approximately 45 minutes, stirring occasionally.
- While the sauce is simmering, bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package instructions, stirring occasionally to prevent sticking. Once cooked, reserve a small amount of pasta water, then drain the spaghetti.
- Transfer the drained spaghetti into the marinara sauce, adding a bit of the reserved pasta water if desired to achieve a silky consistency. Toss the spaghetti in the sauce until fully coated. Serve in bowls, garnished with fresh basil leaves and a sprinkle of vegetarian or vegan Parmesan cheese, if using.
