Firecracker Meatballs are a spicy and creamy dish perfect for any occasion.

- 1 pound ground beef
- ¼ cup bread crumbs
- ¼ cup milk
- 2 tablespoons garlic, minced
- ¼ cup thinly sliced scallions (white bulb ends)
- 1 teaspoon salt
- ½ teaspoon red pepper flakes
- 2 tablespoons vegetable oil
- ¼ cup sour cream
- ¼ cup mayonnaise
- 2 tablespoons buffalo hot sauce
- 2 tablespoons rice vinegar
- 2 tablespoons soy sauce
- 1 tablespoon honey
- Sprinkle of chopped scallions (green ends)
Instructions
- Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper.
- In a large mixing bowl, combine the ground beef, breadcrumbs, milk, minced garlic, sliced scallion whites, salt, and red pepper flakes. Mix until evenly incorporated, then shape the mixture into 1 ½-inch meatballs and arrange them on the prepared baking sheet.
- Lightly brush the tops of the meatballs with vegetable oil. Transfer the baking sheet to the oven and bake for 15 minutes until cooked through.
- Meanwhile, in a medium bowl, whisk together the sour cream, mayonnaise, buffalo hot sauce, rice vinegar, soy sauce, and honey until smooth. Set aside.
- Once the meatballs are cooked, arrange them on a serving plate or over rice. Drizzle the prepared sauce over the top, then garnish with additional chopped scallions (green ends) if desired.
Notes
- Adjust the level of spiciness by varying the amount of red pepper flakes.
- Serve with rice or as an appetizer.
