Description

Fluffy Sponge Cake is a light and airy dessert perfect for any occasion.


Ingredients

Scale
  • 4 large eggs, at room temperature
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter, melted and cooled
  • 1/4 cup milk, at room temperature

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour an 8-inch round cake pan or line it with parchment paper.
  2. In a large mixing bowl, beat the eggs with an electric mixer on high speed for about 5 minutes until they are thick and pale. Gradually add the sugar while continuing to beat until the mixture is fluffy and has doubled in volume. Stir in the vanilla extract.
  3. In a separate bowl, sift together the flour, baking powder, and salt.
  4. Gently fold the dry ingredients into the egg mixture using a spatula, being careful not to deflate the batter.
  5. In a small bowl, combine the melted butter and milk. Gradually fold this mixture into the batter until just combined.
  6. Pour the batter into the prepared cake pan and smooth the top. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Once cooled, slice and serve as desired.
