Description

A quick and delicious comfort food recipe featuring pasta, garlic, and mushrooms.


Ingredients

  • 8 oz pasta (spaghetti or fettuccine)
  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 3 cups mushrooms, sliced (button or cremini)
  • 4 garlic cloves, minced
  • Salt and pepper to taste
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup grated Parmesan cheese (optional)
  • Lemon wedges (for serving)

Instructions

  1. In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.
  2. In a large skillet, melt the butter and olive oil over medium heat. Add the sliced mushrooms and sauté for about 5-7 minutes until they are golden brown and tender. Stir occasionally to ensure even cooking.
  3. Add the minced garlic to the skillet with the mushrooms and cook for an additional 1-2 minutes until fragrant. Season with salt, pepper, and red pepper flakes if using. Stir well to combine.
  4. Add the cooked pasta to the skillet and toss to combine with the mushroom mixture. If the pasta seems dry, gradually add reserved pasta water until the desired consistency is reached. Stir in the chopped parsley and mix well.
  5. Serve the garlic butter mushroom pasta hot, topped with grated Parmesan cheese if desired, and a squeeze of fresh lemon juice.
