Description

Gordon Ramsay’s Quick Shrimp Scampi is a delightful and speedy seafood dish.


Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 3 tablespoons unsalted butter
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes (adjust to taste)
  • Salt and pepper to taste
  • 1/2 cup dry white wine or chicken broth
  • Juice of 1 lemon
  • 1/4 cup fresh parsley, chopped
  • 8 ounces linguine or spaghetti
  • Freshly grated Parmesan cheese (for serving)

Instructions

  1. In a large pot, bring salted water to a boil. Add the linguine or spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.
  2. In a large skillet over medium-high heat, add the olive oil and butter. Once melted and bubbling, add the minced garlic and red pepper flakes, sautéing for about 30 seconds until fragrant.
  3. Add the shrimp to the skillet, season with salt and pepper, and cook for about 2-3 minutes on each side until they turn pink and opaque.
  4. Pour in the white wine or chicken broth, scraping up any bits from the bottom of the skillet. Let it simmer for about 2 minutes to reduce slightly.
  5. Stir in the lemon juice and chopped parsley, mixing well.
  6. Add the drained pasta to the skillet, tossing to coat in the sauce. If the mixture seems dry, add a bit of the reserved pasta water until desired consistency is reached.
  7. Plate the shrimp scampi and garnish with freshly grated Parmesan cheese and additional parsley if desired.
