Gordon Ramsay’s Quick Shrimp Scampi is a delightful and speedy seafood dish.
Ingredients

- 1 pound large shrimp, peeled and deveined
- 3 tablespoons unsalted butter
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1/4 teaspoon red pepper flakes (adjust to taste)
- Salt and pepper to taste
- 1/2 cup dry white wine or chicken broth
- Juice of 1 lemon
- 1/4 cup fresh parsley, chopped
- 8 ounces linguine or spaghetti
- Freshly grated Parmesan cheese (for serving)
Instructions
- In a large pot, bring salted water to a boil. Add the linguine or spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.
- In a large skillet over medium-high heat, add the olive oil and butter. Once melted and bubbling, add the minced garlic and red pepper flakes, sautéing for about 30 seconds until fragrant.
- Add the shrimp to the skillet, season with salt and pepper, and cook for about 2-3 minutes on each side until they turn pink and opaque.
- Pour in the white wine or chicken broth, scraping up any bits from the bottom of the skillet. Let it simmer for about 2 minutes to reduce slightly.
- Stir in the lemon juice and chopped parsley, mixing well.
- Add the drained pasta to the skillet, tossing to coat in the sauce. If the mixture seems dry, add a bit of the reserved pasta water until desired consistency is reached.
- Plate the shrimp scampi and garnish with freshly grated Parmesan cheese and additional parsley if desired.
