A fun twist on a classic dish, these Grilled Chicken Caesar Salad Skewers combine savory grilled chicken with fresh salad ingredients.

- 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 8–10 wooden or metal skewers
- 4 cups romaine lettuce, chopped
- 1/2 cup cherry tomatoes, halved
- 1/4 cup grated Parmesan cheese
- 1/4 cup Caesar dressing
Instructions
- In a bowl, combine the chicken cubes with olive oil, garlic powder, Italian seasoning, salt, and pepper. Mix well and let it marinate for at least 30 minutes in the refrigerator.
- Thread the marinated chicken cubes onto the skewers, leaving a little space between each piece.
- Preheat your grill to medium-high heat.
- Place the skewers on the grill and cook for 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
- In a large bowl, combine the chopped romaine lettuce, cherry tomatoes, and grated Parmesan cheese. Drizzle with Caesar dressing and toss until well combined.
- Serve the grilled chicken skewers over a bed of the Caesar salad mixture. Drizzle with additional Caesar dressing if desired.
