Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 3 tablespoons olive oil
  • 4 garlic cloves, minced
  • Juice of 1 lemon
  • Zest of 1 lemon
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Lemon wedges (for serving)

Instructions

  1. Combine Ingredients: In a large bowl, whisk together olive oil, minced garlic, lemon juice, lemon zest, paprika, salt, and pepper.
  2. Add Shrimp: Add the shrimp to the bowl and toss to coat evenly with the marinade.
  3. Marinate: Cover the bowl and let the shrimp marinate in the refrigerator for at least 30 minutes.
  4. Preheat Grill: Preheat your grill to medium-high heat. If using wooden skewers, soak them in water for about 30 minutes.
  5. Skewer Shrimp: Thread the marinated shrimp onto skewers, leaving a little space between each shrimp.
  6. Grill: Place the skewers on the grill and cook for 2-3 minutes on each side, or until the shrimp turn pink and opaque.
  7. Remove from Grill: Once cooked, remove the skewers from the grill and let them rest for a minute.
  8. Garnish and Serve: Transfer the grilled shrimp to a serving platter, garnish with chopped fresh parsley, and serve with lemon wedges on the side.
