Instructions
- Prepare the vegetables: Slice the zucchini, bell pepper, and red onion, and prepare the cherry tomatoes and mushrooms.
- Skewer the vegetables: Thread the zucchini, bell pepper, onion, cherry tomatoes, and mushrooms onto the skewers, alternating the vegetables for a colorful presentation.
- Season the skewers: Brush the vegetable skewers with olive oil and season with salt and pepper.
- Preheat the grill: Heat the grill to medium-high.
- Grill the skewers: Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the vegetables are tender and slightly charred.
- Make the lemon vinaigrette: In a small bowl, combine olive oil, lemon juice, Dijon mustard, minced garlic, salt, and pepper. Whisk until well combined.
- Drizzle the vinaigrette: Once the skewers are done grilling, remove them from the grill and drizzle with the lemon vinaigrette.
