Description

Ingredients

  • Wooden or metal skewers
  • 1/4 cup olive oil (for vinaigrette)
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • Salt and pepper to taste (for vinaigrette)
  • Fresh herbs (such as parsley or basil), chopped for garnish

Instructions

  1. Prepare the vegetables: Slice the zucchini, bell pepper, and red onion, and prepare the cherry tomatoes and mushrooms.
  2. Skewer the vegetables: Thread the zucchini, bell pepper, onion, cherry tomatoes, and mushrooms onto the skewers, alternating the vegetables for a colorful presentation.
  3. Season the skewers: Brush the vegetable skewers with olive oil and season with salt and pepper.
  4. Preheat the grill: Heat the grill to medium-high.
  5. Grill the skewers: Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the vegetables are tender and slightly charred.
  6. Make the lemon vinaigrette: In a small bowl, combine olive oil, lemon juice, Dijon mustard, minced garlic, salt, and pepper. Whisk until well combined.
  7. Drizzle the vinaigrette: Once the skewers are done grilling, remove them from the grill and drizzle with the lemon vinaigrette.
