Description

A quick and healthy weeknight dinner featuring ground turkey and whole wheat pasta.


Ingredients

Scale
  • 8 ounces whole wheat pasta (penne or rotini)
  • 1 tablespoon olive oil
  • 1 pound ground turkey
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 bell pepper, diced
  • 1 zucchini, diced
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1 teaspoon dried Italian seasoning
  • Salt and pepper to taste
  • 1/2 cup shredded mozzarella cheese
  • Fresh basil, chopped (for garnish)

Instructions

  1. In a large pot of salted boiling water, cook the whole wheat pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the ground turkey and cook until browned, breaking it apart with a spatula, about 5-7 minutes.
  3. Stir in the diced onion, garlic, bell pepper, and zucchini. Cook for an additional 5 minutes until the vegetables are tender.
  4. Pour in the diced tomatoes along with their juices and stir to combine. Add the dried Italian seasoning, salt, and pepper. Let the mixture simmer for about 5 minutes to allow the flavors to meld.
  5. Add the cooked pasta to the skillet and toss everything together until well mixed. Sprinkle the shredded mozzarella cheese over the top, cover, and let it melt for about 2-3 minutes.
  6. Remove from heat, garnish with fresh basil, and serve hot.
