- 2–3 pounds steak, cut into bite-sized pieces
- 1 pound baby potatoes, halved
- ¼ cup oil
- ½ teaspoon paprika
- ½ teaspoon dried minced onion
- ½ teaspoon garlic powder
- ½ teaspoon pepper
- 1 tablespoon butter
- ⅓ cup honey
- 2 cloves garlic, minced
- 7-ounce can chipotles in adobo, just the liquid
Instructions
- In a large bowl, combine the halved baby potatoes, oil, paprika, dried minced onion, garlic powder, and pepper. Toss until the potatoes are evenly coated with the seasoning mixture.
- Heat a large skillet over medium-high heat. Add the seasoned potatoes and cook for 12-15 minutes, stirring frequently, until they are tender and nicely browned. Transfer the cooked potatoes to a plate and set aside.
- In the same skillet, add the steak pieces and cook until browned on the outside and cooked to your desired doneness. Remove the steak from the skillet and set aside with the potatoes.
- In the same skillet, melt the butter over medium-high heat. Add the honey, minced garlic, and the liquid from the can of chipotles. Whisk until combined and the mixture starts to bubble.
- Return the cooked steak bites to the skillet and toss to coat them evenly with the chipotle-honey sauce. Finally, add the cooked potatoes back to the skillet and gently toss everything together until well combined.
- Garnish with chopped fresh parsley and serve hot.
