Description

A quick and delicious weeknight meal featuring tender chicken and vibrant vegetables in a sweet and savory sauce.


Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons vegetable oil
  • 1 cup bell peppers, sliced (any color)
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 3 cloves garlic, minced
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • Salt and pepper to taste
  • Cooked rice or noodles (for serving)
  • Sesame seeds and green onions (for garnish)

Instructions

  1. In a small bowl, whisk together honey, soy sauce, cornstarch, and water until smooth. Set aside.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat. Add the chicken pieces and season with salt and pepper. Cook for about 5-7 minutes, stirring frequently, until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the sliced bell peppers, broccoli florets, and snap peas. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp. Add minced garlic and cook for an additional minute until fragrant.
  4. Return the cooked chicken to the skillet with the vegetables. Pour the honey garlic sauce over the mixture and stir well to combine. Cook for another 2-3 minutes until the sauce thickens and everything is heated through.
  5. Serve the honey garlic chicken stir fry over cooked rice or noodles. Garnish with sesame seeds and chopped green onions.
