Lasagna Soup: A comforting and hearty dish that combines all the flavors of traditional lasagna in a soup form.

- 1 pound ground beef or Italian sausage
- 1 medium onion, chopped
- 2 garlic cloves, minced
- 1 can (28 oz) crushed tomatoes
- 4 cups beef or vegetable broth
- 1 tablespoon tomato paste
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 8 lasagna noodles, broken into pieces
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Fresh basil leaves, chopped (for garnish)
Instructions
- In a large pot or Dutch oven, heat over medium heat. Add the ground beef or Italian sausage and cook until browned, breaking it apart with a spoon. Drain excess fat if necessary. Add the chopped onion and minced garlic, cooking until the onion is translucent, about 3-4 minutes.
- Stir in the crushed tomatoes, beef or vegetable broth, and tomato paste. Add dried basil, dried oregano, salt, and pepper. Bring the mixture to a simmer.
- Once the soup is simmering, add the broken lasagna noodles to the pot. Cook for about 10-12 minutes, or until the noodles are tender.
- Stir in the ricotta cheese until well combined and heated through. Remove the pot from heat and stir in half of the mozzarella cheese and half of the Parmesan cheese.
- Ladle the soup into bowls and top with the remaining mozzarella and Parmesan cheese. Garnish with fresh basil leaves before serving.
