Description

Lasagna Soup: A comforting and hearty dish that combines all the flavors of traditional lasagna in a soup form.


Ingredients

  • 1 pound ground beef or Italian sausage
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups beef or vegetable broth
  • 1 tablespoon tomato paste
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 8 lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh basil leaves, chopped (for garnish)

Instructions

  1. In a large pot or Dutch oven, heat over medium heat. Add the ground beef or Italian sausage and cook until browned, breaking it apart with a spoon. Drain excess fat if necessary. Add the chopped onion and minced garlic, cooking until the onion is translucent, about 3-4 minutes.
  2. Stir in the crushed tomatoes, beef or vegetable broth, and tomato paste. Add dried basil, dried oregano, salt, and pepper. Bring the mixture to a simmer.
  3. Once the soup is simmering, add the broken lasagna noodles to the pot. Cook for about 10-12 minutes, or until the noodles are tender.
  4. Stir in the ricotta cheese until well combined and heated through. Remove the pot from heat and stir in half of the mozzarella cheese and half of the Parmesan cheese.
  5. Ladle the soup into bowls and top with the remaining mozzarella and Parmesan cheese. Garnish with fresh basil leaves before serving.
