Description

Lemon Garlic Scallops with Pasta is a simple yet irresistible dish that combines tender scallops with flavorful pasta.


Ingredients

  • 8 oz linguine or spaghetti
  • 1 lb sea scallops, cleaned and patted dry
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 cup white wine or vegetable broth
  • 1 lemon, zested and juiced
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Grated Parmesan cheese (for serving)

Instructions

  1. In a large pot, bring salted water to a boil. Add the linguine or spaghetti and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.
  2. In a large skillet, heat olive oil over medium-high heat. Once the oil is hot, add the scallops in a single layer. Sear for about 2-3 minutes on each side until they are golden brown and opaque. Remove the scallops from the skillet and set aside.
  3. In the same skillet, add minced garlic and red pepper flakes (if using). Sauté for about 1 minute until fragrant. Pour in the white wine or vegetable broth, scraping the bottom of the skillet to release any browned bits. Let it simmer for 2-3 minutes until slightly reduced. Stir in the lemon zest and juice, then season with salt and pepper to taste.
  4. Add the cooked pasta to the skillet with the sauce, tossing to combine. If the pasta seems dry, add reserved pasta water a little at a time until desired consistency is reached. Gently fold the seared scallops back into the pasta mixture, allowing them to warm through.
  5. Serve the pasta hot, garnished with chopped fresh parsley and grated Parmesan cheese.
