- 8 oz linguine or spaghetti
- 1 lb sea scallops, cleaned and patted dry
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1/2 teaspoon red pepper flakes (optional)
- 1/2 cup white wine or vegetable broth
- 1 lemon, zested and juiced
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
- Grated Parmesan cheese (for serving)
Instructions
- In a large pot, bring salted water to a boil. Add the linguine or spaghetti and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.
- In a large skillet, heat olive oil over medium-high heat. Once the oil is hot, add the scallops in a single layer. Sear for about 2-3 minutes on each side until they are golden brown and opaque. Remove the scallops from the skillet and set aside.
- In the same skillet, add minced garlic and red pepper flakes (if using). Sauté for about 1 minute until fragrant. Pour in the white wine or vegetable broth, scraping the bottom of the skillet to release any browned bits. Let it simmer for 2-3 minutes until slightly reduced. Stir in the lemon zest and juice, then season with salt and pepper to taste.
- Add the cooked pasta to the skillet with the sauce, tossing to combine. If the pasta seems dry, add reserved pasta water a little at a time until desired consistency is reached. Gently fold the seared scallops back into the pasta mixture, allowing them to warm through.
- Serve the pasta hot, garnished with chopped fresh parsley and grated Parmesan cheese.
