- 1 1/2 cups chocolate cookie crumbs
- 1/4 cup unsalted butter, melted
- 2 tablespoons sugar
- 8 oz cream cheese, softened
- 1 cup powdered sugar
- 1 cup heavy whipping cream
- 1 teaspoon vanilla extract
- 1 cup semi-sweet chocolate chips, melted
- 1 cup fresh raspberries
- Fresh raspberries for garnish
- Chocolate shavings for garnish
Instructions
- In a medium bowl, mix the chocolate cookie crumbs, melted butter, and sugar until well combined.
- Press the mixture firmly into the bottom and up the sides of a 9-inch pie pan to form an even crust. Place the crust in the refrigerator for about 30 minutes to set.
- In a large mixing bowl, beat the softened cream cheese and powdered sugar together until smooth and creamy.
- In another bowl, whip the heavy cream and vanilla extract until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture until fully incorporated. Then, fold in the melted chocolate until smooth and well blended.
- Gently fold in the fresh raspberries into the chocolate filling mixture.
- Pour the filling into the prepared chocolate crust, spreading it evenly. Smooth the top with a spatula.
- Cover the pie with plastic wrap and refrigerate for at least 4 hours or until set.
- Before serving, top with additional fresh raspberries and chocolate shavings for decoration.
