Ingredients

  • 1 1/2 cups chocolate cookie crumbs
  • 1/4 cup unsalted butter, melted
  • 2 tablespoons sugar
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 cup heavy whipping cream
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips, melted
  • 1 cup fresh raspberries
  • Fresh raspberries for garnish
  • Chocolate shavings for garnish

Instructions

  1. In a medium bowl, mix the chocolate cookie crumbs, melted butter, and sugar until well combined.
  2. Press the mixture firmly into the bottom and up the sides of a 9-inch pie pan to form an even crust. Place the crust in the refrigerator for about 30 minutes to set.
  3. In a large mixing bowl, beat the softened cream cheese and powdered sugar together until smooth and creamy.
  4. In another bowl, whip the heavy cream and vanilla extract until stiff peaks form.
  5. Gently fold the whipped cream into the cream cheese mixture until fully incorporated. Then, fold in the melted chocolate until smooth and well blended.
  6. Gently fold in the fresh raspberries into the chocolate filling mixture.
  7. Pour the filling into the prepared chocolate crust, spreading it evenly. Smooth the top with a spatula.
  8. Cover the pie with plastic wrap and refrigerate for at least 4 hours or until set.
  9. Before serving, top with additional fresh raspberries and chocolate shavings for decoration.
