Ingredients
  

  • 2 medium zucchini
  • 1 cup breadcrumbs use gluten-free if desired
  • 0.5 cup Parmesan cheese optional, grated
  • 2 large eggs
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • as needed spray oil such as olive oil

Method
 

  1. Wash zucchini and trim ends. Cut lengthwise, then slice into fry-sized sticks.
  2. In a bowl, combine breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper.
  3. In another bowl, whisk eggs with a fork.
  4. Dip each zucchini stick into egg mixture, then coat with breadcrumb mixture.
  5. Preheat air fryer to 200°C (392°F).
  6. Place zucchini fries in a single layer in air fryer basket.
  7. Lightly spray fries with oil to help crisping.
  8. Air fry for 10–12 minutes, shaking the basket halfway through. Add 2–3 minutes if needed.
  9. Let fries cool slightly before serving.

Notes

For best results, salt zucchini and pat dry before breading to reduce moisture. Avoid overcrowding the air fryer for even crisping. Pairs well with ranch, salsa, or guacamole. Store in fridge up to 3 days. Reheat in air fryer or oven for best texture.
