Instructions
- Sauté Meat: In a large skillet over medium heat, add the ground beef or turkey. Cook until browned, breaking it up with a spoon, about 5-7 minutes. Drain excess fat if necessary.
- Add Vegetables: Stir in the chopped onion, minced garlic, and diced bell pepper. Cook for an additional 3-4 minutes until the vegetables are softened.
- Mix in Beans and Corn: Add the black beans, corn, and diced tomatoes to the skillet. Stir in the chili powder, cumin, salt, and pepper. Let the mixture simmer for about 5 minutes to combine the flavors.
- Incorporate Rice: Gently fold in the cooked rice until everything is evenly mixed.
- Transfer to Casserole Dish: Preheat your oven to 350°F (175°C). Pour the mixture into a greased 9×13-inch casserole dish, spreading it evenly.
