Description

One Pot Sausage and Peppers Pasta is a quick and delicious weeknight meal.


Ingredients

  • 12 ounces pasta (penne or rigatoni)
  • 1 tablespoon olive oil
  • 1 pound Italian sausage (mild or spicy, casings removed)
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes, with juices
  • 4 cups chicken or vegetable broth
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil, chopped (for garnish)
  • Grated Parmesan cheese (for serving)

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add the Italian sausage, breaking it up with a spoon. Cook until browned and cooked through, about 5-7 minutes. Remove the sausage from the pot and set aside.
  2. In the same pot, add the sliced bell peppers and onion. Sauté for about 5 minutes until the vegetables are softened. Add the minced garlic and cook for an additional minute until fragrant.
  3. Stir in the diced tomatoes (with juices), chicken or vegetable broth, and Italian seasoning. Bring the mixture to a boil.
  4. Add the pasta to the boiling mixture, stirring well. Reduce the heat to a simmer and cover the pot. Cook for about 12-15 minutes, stirring occasionally, until the pasta is al dente and the liquid has mostly absorbed.
  5. Return the cooked sausage to the pot and stir to combine. Season with salt and pepper to taste. Serve hot, garnished with fresh basil and grated Parmesan cheese.
