Description
One Pot Sausage and Peppers Pasta is a quick and delicious weeknight meal.

- 12 ounces pasta (penne or rigatoni)
- 1 tablespoon olive oil
- 1 pound Italian sausage (mild or spicy, casings removed)
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 medium onion, sliced
- 3 cloves garlic, minced
- 1 can (14.5 ounces) diced tomatoes, with juices
- 4 cups chicken or vegetable broth
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh basil, chopped (for garnish)
- Grated Parmesan cheese (for serving)
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add the Italian sausage, breaking it up with a spoon. Cook until browned and cooked through, about 5-7 minutes. Remove the sausage from the pot and set aside.
- In the same pot, add the sliced bell peppers and onion. Sauté for about 5 minutes until the vegetables are softened. Add the minced garlic and cook for an additional minute until fragrant.
- Stir in the diced tomatoes (with juices), chicken or vegetable broth, and Italian seasoning. Bring the mixture to a boil.
- Add the pasta to the boiling mixture, stirring well. Reduce the heat to a simmer and cover the pot. Cook for about 12-15 minutes, stirring occasionally, until the pasta is al dente and the liquid has mostly absorbed.
- Return the cooked sausage to the pot and stir to combine. Season with salt and pepper to taste. Serve hot, garnished with fresh basil and grated Parmesan cheese.
