Description

Pasta Rice is a delightful fusion of flavors that combines pasta and rice in a simple dish.


Ingredients

Scale
  • 1 cup pasta (any shape you prefer)
  • 1 cup rice (long-grain or basmati)
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 bell pepper, diced
  • 2 cups vegetable broth or water
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
  2. In a separate pot, combine the rice and vegetable broth (or water). Bring to a boil, then reduce heat to low, cover, and simmer for about 15-20 minutes or until the rice is tender and the liquid is absorbed. Fluff with a fork and set aside.
  3. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 3-4 minutes. Stir in the minced garlic and diced bell pepper, cooking for an additional 2-3 minutes until softened.
  4. Add the cooked pasta and rice to the skillet with the sautéed vegetables. Sprinkle in the Italian seasoning, salt, and pepper. Stir well to combine and heat through for about 2-3 minutes.
  5. Remove from heat and garnish with chopped fresh parsley. Serve warm as a delightful side dish or a light main course.
