Description

A delicious and easy summer dinner featuring pulled chicken in barbecue sauce.


Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 1 cup barbecue sauce (your favorite brand)
  • 1/2 cup chicken broth
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 4 hamburger buns
  • Coleslaw (for topping, optional)

Instructions

  1. Place the chicken breasts in the crockpot. Season with salt, pepper, garlic powder, onion powder, and smoked paprika. In a separate bowl, mix together the barbecue sauce, chicken broth, and apple cider vinegar. Pour this mixture over the chicken in the crockpot.
  2. Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and easily shreds with a fork.
  3. Once cooked, remove the chicken from the crockpot and place it on a cutting board. Use two forks to shred the chicken into bite-sized pieces. Return the shredded chicken to the crockpot and stir it into the remaining sauce, ensuring it is well coated.
  4. Toast the hamburger buns if desired. Spoon the pulled chicken mixture onto the bottom half of each bun. Top with coleslaw if using, then place the top half of the bun on.
