Purple Velvet Cake is a delightful twist on the classic velvet cake, featuring a rich purple hue and creamy frosting.

- 2 ½ cups all-purpose flour
- 1 ½ cups granulated sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup vegetable oil
- 1 cup buttermilk, room temperature
- 3 large eggs, room temperature
- 2 tablespoons purple food coloring
- 1 teaspoon vanilla extract
- 1 teaspoon almond extract
- 1 tablespoon white vinegar
- 8 oz cream cheese, softened
- ½ cup unsalted butter, softened
- 4 cups powdered sugar
- 1 teaspoon vanilla extract
- 1–2 tablespoons milk (as needed for consistency)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
- In another bowl, mix the vegetable oil, buttermilk, eggs, purple food coloring, vanilla extract, almond extract, and vinegar until smooth.
- Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Be careful not to overmix.
- Divide the batter evenly between the prepared cake pans.
- Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Once baked, remove the cakes from the oven and let them cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
- In a mixing bowl, beat the softened cream cheese and butter together until creamy and smooth.
- Gradually add the powdered sugar and vanilla extract, mixing until well combined. If the frosting is too thick, add milk one tablespoon at a time until the desired consistency is reached.
- Once the cakes are completely cool, place one layer on a serving plate. Spread a generous amount of cream cheese frosting on top.
- Place the second cake layer on top and frost the top and sides of the entire cake with the remaining cream cheese frosting.

- Let the cake sit at room temperature for 30 minutes before serving for best flavor.
