Description

Purple Velvet Cake is a delightful twist on the classic velvet cake, featuring a rich purple hue and creamy frosting.


Ingredients

  • 2 ½ cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup vegetable oil
  • 1 cup buttermilk, room temperature
  • 3 large eggs, room temperature
  • 2 tablespoons purple food coloring
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 1 tablespoon white vinegar
  • 8 oz cream cheese, softened
  • ½ cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 12 tablespoons milk (as needed for consistency)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
  3. In another bowl, mix the vegetable oil, buttermilk, eggs, purple food coloring, vanilla extract, almond extract, and vinegar until smooth.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Be careful not to overmix.
  5. Divide the batter evenly between the prepared cake pans.
  6. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  7. Once baked, remove the cakes from the oven and let them cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
  8. In a mixing bowl, beat the softened cream cheese and butter together until creamy and smooth.
  9. Gradually add the powdered sugar and vanilla extract, mixing until well combined. If the frosting is too thick, add milk one tablespoon at a time until the desired consistency is reached.
  10. Once the cakes are completely cool, place one layer on a serving plate. Spread a generous amount of cream cheese frosting on top.
  11. Place the second cake layer on top and frost the top and sides of the entire cake with the remaining cream cheese frosting.
