Ingredients

  • 4 large eggs
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper for easy removal.
  2. In a large mixing bowl, combine the eggs and granulated sugar. Using an electric mixer, beat on high speed for about 5-7 minutes until the mixture is thick, pale, and has doubled in volume.
  3. In a separate bowl, sift together the all-purpose flour, baking powder, and salt.
  4. Gently fold the dry ingredients into the egg mixture using a spatula.
  5. Drizzle the melted butter and vanilla extract over the batter, and gently fold until just combined.
  6. Pour the batter into the prepared cake pan and smooth the top with a spatula. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  7. Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely before serving.
