A healthy and quick meal option featuring salmon and asparagus.
Ingredients

- 4 salmon fillets (about 6 oz each)
- 1 bunch of asparagus, trimmed
- 3 tablespoons olive oil
- 2 lemons (1 for juice and 1 for slices)
- 2 garlic cloves, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
- In a small bowl, mix olive oil, lemon juice, minced garlic, oregano, thyme, salt, and pepper. Place salmon fillets on one side of the baking sheet and brush with the herb mixture.
- On the other side of the baking sheet, arrange the trimmed asparagus. Drizzle with olive oil and season with salt and pepper. Toss to coat.
- Place lemon slices on top of the salmon fillets. Transfer the baking sheet to the oven and bake for 12-15 minutes, or until the salmon is cooked through and flakes easily, and the asparagus is tender.
- Remove from the oven, sprinkle with chopped fresh parsley, and serve immediately.
Notes
- This dish is best served fresh.
- You can substitute other vegetables if desired.
