Description

A healthy and quick meal option featuring salmon and asparagus.


Ingredients

Scale
  • 4 salmon fillets (about 6 oz each)
  • 1 bunch of asparagus, trimmed
  • 3 tablespoons olive oil
  • 2 lemons (1 for juice and 1 for slices)
  • 2 garlic cloves, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. In a small bowl, mix olive oil, lemon juice, minced garlic, oregano, thyme, salt, and pepper. Place salmon fillets on one side of the baking sheet and brush with the herb mixture.
  3. On the other side of the baking sheet, arrange the trimmed asparagus. Drizzle with olive oil and season with salt and pepper. Toss to coat.
  4. Place lemon slices on top of the salmon fillets. Transfer the baking sheet to the oven and bake for 12-15 minutes, or until the salmon is cooked through and flakes easily, and the asparagus is tender.
  5. Remove from the oven, sprinkle with chopped fresh parsley, and serve immediately.

Notes

  • This dish is best served fresh.
  • You can substitute other vegetables if desired.
