Description

Shrimp Scampi Noodles is a delightful seafood pasta dish that combines shrimp, garlic, and a light sauce for a quick meal.


Ingredients

  • 8 ounces linguine or spaghetti
  • 1 pound large shrimp, peeled and deveined
  • 3 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 4 garlic cloves, minced
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 cup dry white wine or chicken broth
  • Juice of 1 lemon
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped
  • Grated Parmesan cheese (for serving)

Instructions

  1. In a large pot, bring salted water to a boil. Add the linguine or spaghetti and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the noodles and set aside.
  2. In a large skillet, heat the butter and olive oil over medium heat. Add the minced garlic and red pepper flakes (if using) and sauté for about 1 minute until fragrant.
  3. Add the shrimp to the skillet and season with salt and pepper. Cook for 2-3 minutes on each side, or until the shrimp turn pink and opaque.
  4. Pour in the white wine or chicken broth and lemon juice. Bring to a simmer and cook for about 2-3 minutes, allowing the sauce to reduce slightly. Add the cooked noodles to the skillet, tossing to coat in the sauce. If the mixture seems dry, add a bit of the reserved pasta water to achieve the desired consistency.
  5. Stir in the chopped parsley and adjust seasoning with additional salt and pepper if needed. Plate the shrimp scampi noodles and top with grated Parmesan cheese before serving.
