- 1 pound large shrimp, peeled and deveined
- 1 bunch asparagus, trimmed and cut into 2-inch pieces
- 2 tablespoons olive oil
- 3 garlic cloves, minced
- Salt and pepper to taste
- 1 teaspoon lemon zest
- 1 tablespoon lemon juice
- Fresh parsley, chopped (for garnish)
Instructions
- Prepare the ingredients: Rinse the shrimp under cold water and pat them dry with paper towels. Season with salt and pepper. Trim the ends of the asparagus and cut them into 2-inch pieces.
- Cook the asparagus: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the asparagus pieces and sauté for about 3-4 minutes until they are tender-crisp. Remove the asparagus from the skillet and set aside.
- Cook the shrimp: In the same skillet, add the remaining tablespoon of olive oil. Add the minced garlic and cook for about 30 seconds until fragrant. Then, add the shrimp and cook for 2-3 minutes on each side until they turn pink and opaque. Return the cooked asparagus to the skillet with the shrimp. Add the lemon zest and lemon juice, stirring to combine. Cook for an additional minute to heat through.
- Serve: Transfer the shrimp and asparagus to a serving dish and garnish with chopped fresh parsley. Serve immediately.
