- 1 pound large shrimp, peeled and deveined
- 8 ounces linguine or spaghetti
- 4 tablespoons unsalted butter
- 2 tablespoons olive oil
- 4 garlic cloves, minced
- 1/4 teaspoon red pepper flakes (optional)
- 1/2 cup dry white wine or chicken broth
- Juice of 1 lemon
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot, bring salted water to a boil. Add the linguine or spaghetti and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.
- In a large skillet over medium heat, melt the butter and olive oil together. Once the butter is melted, add the minced garlic and red pepper flakes (if using). Sauté for about 1 minute until fragrant, being careful not to burn the garlic. Add the shrimp to the skillet and season with salt and pepper. Cook for about 2-3 minutes on each side until the shrimp turn pink and opaque.
- Pour in the white wine or chicken broth and bring to a simmer. Let it cook for about 2 minutes to reduce slightly. Stir in the lemon juice and adjust seasoning if needed.
- Add the cooked pasta to the skillet and toss to coat in the sauce. If the mixture seems dry, add a bit of the reserved pasta water to reach the desired consistency. Serve immediately, garnished with chopped fresh parsley.
