Description

Simple Shrimp Scampi is a quick and flavorful dish that combines shrimp, pasta, and a delicious garlic sauce.


Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 8 ounces linguine or spaghetti
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 4 garlic cloves, minced
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 cup dry white wine or chicken broth
  • Juice of 1 lemon
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, bring salted water to a boil. Add the linguine or spaghetti and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.
  2. In a large skillet over medium heat, melt the butter and olive oil together. Once the butter is melted, add the minced garlic and red pepper flakes (if using). Sauté for about 1 minute until fragrant, being careful not to burn the garlic. Add the shrimp to the skillet and season with salt and pepper. Cook for about 2-3 minutes on each side until the shrimp turn pink and opaque.
  3. Pour in the white wine or chicken broth and bring to a simmer. Let it cook for about 2 minutes to reduce slightly. Stir in the lemon juice and adjust seasoning if needed.
  4. Add the cooked pasta to the skillet and toss to coat in the sauce. If the mixture seems dry, add a bit of the reserved pasta water to reach the desired consistency. Serve immediately, garnished with chopped fresh parsley.
