- 3 to 4 pounds beef chuck roast
- 1 cup beef broth
- 1 cup barbecue sauce (your favorite brand)
- 1 onion, sliced
- 4 cloves garlic, minced
- 1 tablespoon Worcestershire sauce
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 8 hamburger buns
- Coleslaw (optional, for topping)
Instructions
- Season the Roast: Rub the beef chuck roast with salt, black pepper, and smoked paprika.
- Sear the Meat: In a large skillet over medium-high heat, sear the roast on all sides until browned, about 4-5 minutes per side.
- Combine Ingredients: Place the sliced onions and minced garlic at the bottom of the slow cooker. Add the seared beef roast on top.
- Add Liquids: Pour in the beef broth, barbecue sauce, and Worcestershire sauce over the roast.
- Slow Cook: Cover the slow cooker and cook on low for 8 hours or on high for 4-5 hours, until the beef is tender and easily shredded with a fork.
- Shred the Beef: Once cooked, remove the beef from the slow cooker and shred it using two forks. Return the shredded beef to the slow cooker and stir it into the sauce.
- Assemble Sandwiches: Serve the BBQ beef on hamburger buns and top with coleslaw if desired.
