Description

A hearty and comforting classic beef stew made in a slow cooker.


Ingredients

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 3 tablespoons all-purpose flour
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 carrots, sliced
  • 3 potatoes, diced
  • 2 cups beef broth
  • 1 cup red wine (or additional beef broth)
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Coat Beef: In a large bowl, toss the beef cubes with flour, salt, and pepper until well coated.
  2. Sear Beef: In a skillet, heat olive oil over medium-high heat. Add the beef in batches and sear until browned on all sides. Transfer the browned beef to the slow cooker.
  3. Sauté Aromatics: In the same skillet, add chopped onion and minced garlic. Sauté for about 2-3 minutes until the onion is translucent.
  4. Combine Ingredients: Add the sautéed onion and garlic to the slow cooker along with sliced carrots and diced potatoes.
  5. Mix Liquids: In a separate bowl, combine beef broth, red wine (or additional broth), tomato paste, thyme, and rosemary. Stir until well mixed.
  6. Pour Over Ingredients: Pour the liquid mixture over the beef and vegetables in the slow cooker. Stir gently to combine.
  7. Set Slow Cooker: Cover and cook on low for 7-8 hours or on high for 4-5 hours, until the beef is tender and the flavors meld together.
  8. Garnish and Enjoy: Once cooked, taste and adjust seasoning with salt and pepper if needed. Serve hot, garnished with fresh parsley.
