Description
A hearty and comforting classic beef stew made in a slow cooker.
Ingredients

- 2 pounds beef chuck, cut into 1-inch cubes
- 3 tablespoons all-purpose flour
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 carrots, sliced
- 3 potatoes, diced
- 2 cups beef broth
- 1 cup red wine (or additional beef broth)
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Coat Beef: In a large bowl, toss the beef cubes with flour, salt, and pepper until well coated.
- Sear Beef: In a skillet, heat olive oil over medium-high heat. Add the beef in batches and sear until browned on all sides. Transfer the browned beef to the slow cooker.
- Sauté Aromatics: In the same skillet, add chopped onion and minced garlic. Sauté for about 2-3 minutes until the onion is translucent.
- Combine Ingredients: Add the sautéed onion and garlic to the slow cooker along with sliced carrots and diced potatoes.
- Mix Liquids: In a separate bowl, combine beef broth, red wine (or additional broth), tomato paste, thyme, and rosemary. Stir until well mixed.
- Pour Over Ingredients: Pour the liquid mixture over the beef and vegetables in the slow cooker. Stir gently to combine.
- Set Slow Cooker: Cover and cook on low for 7-8 hours or on high for 4-5 hours, until the beef is tender and the flavors meld together.
- Garnish and Enjoy: Once cooked, taste and adjust seasoning with salt and pepper if needed. Serve hot, garnished with fresh parsley.
