Description

Turtle Caramel Cake is a delightful dessert with layers of chocolate cake, caramel sauce, pecans, and chocolate chips.


Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 1 cup vegetable oil
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 1 cup boiling water
  • 1 cup granulated sugar (for caramel sauce)
  • 1/4 cup unsalted butter
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract (for caramel sauce)
  • 1 cup chopped pecans (for topping)
  • 1 cup chocolate chips (for topping)
  • 1/2 cup caramel sauce (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, and cocoa powder. Set aside.
  3. In a large mixing bowl, beat together granulated sugar, brown sugar, and vegetable oil until well combined. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and buttermilk.
  4. Gradually add the dry ingredients to the wet mixture, alternating with boiling water, and mix until smooth.
  5. Divide the batter evenly between the prepared cake pans and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes before transferring to wire racks to cool completely.
  6. In a medium saucepan over medium heat, melt the granulated sugar, stirring constantly until it turns a golden brown color.
  7. Once the sugar has melted, carefully add the butter and stir until melted. Slowly pour in the heavy cream while continuing to stir. Remove from heat and stir in vanilla extract. Allow the sauce to cool slightly.
  8. Once the cakes are completely cool, place one layer on a serving plate. Drizzle a portion of the caramel sauce over the top and sprinkle with chopped pecans and chocolate chips.
  9. Place the second cake layer on top and repeat the process, drizzling with more caramel sauce, pecans, and chocolate chips.
  10. Drizzle the remaining caramel sauce over the top of the cake and garnish with additional pecans and chocolate chips as desired.

Notes

  • Store leftovers in an airtight container.
  • For a richer flavor, use dark chocolate cocoa powder.
  • Allow the cake to set for a few hours before serving for better flavor.
