Description

Turtle Caramel Cake is a delightful dessert featuring layers of rich chocolate cake, caramel sauce, pecans, and chocolate chips.


Ingredients

  • 1 ¾ cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • ½ cup brown sugar, packed
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 1 cup boiling water
  • 1 cup granulated sugar (for caramel sauce)
  • 6 tablespoons unsalted butter (for caramel sauce)
  • ½ cup heavy cream (for caramel sauce)
  • 1 teaspoon vanilla extract (for caramel sauce)
  • Pinch of salt (for caramel sauce)
  • 1 cup chopped pecans (for topping)
  • 1 cup chocolate chips (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a bowl, whisk together the flour, baking powder, baking soda, salt, cocoa powder, granulated sugar, and brown sugar until well combined.
  3. In a large mixing bowl, beat the softened butter until creamy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. Gradually add the dry mixture to the butter mixture, alternating with buttermilk. Mix until just combined. Carefully stir in the boiling water until the batter is smooth.
  5. Divide the batter evenly between the prepared cake pans. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean. Let the cakes cool in the pans for 10 minutes before transferring to wire racks to cool completely.
  6. In a medium saucepan over medium heat, melt the granulated sugar, stirring constantly until it turns a deep amber color.
  7. Once melted, carefully add the butter and stir until melted and combined.
  8. Slowly pour in the heavy cream while stirring continuously. Be cautious as the mixture will bubble up. Stir in the vanilla extract and a pinch of salt. Remove from heat and let cool slightly.
  9. Place one cake layer on a serving plate. Drizzle a portion of the caramel sauce over the top and sprinkle with chopped pecans and chocolate chips.
  10. Place the second cake layer on top and repeat the process, drizzling more caramel sauce, pecans, and chocolate chips.
  11. Drizzle the remaining caramel sauce over the top of the cake and garnish with additional pecans and chocolate chips as desired.
